This would not make her a dragonborn but could cause a variety of potential side effects including lowered emotional control, wild swings of emotions, occasional loss of magical control, nightmares, spikes of unpredicted and uncontrolled magical use, or a lust for power or things.
Dragonborn blood is diluted dragon's blood, and the dilution causes the effects to be less potent but more twisted. It could easily cause curses as well, especially those with side effects that appear like an illness. The latter is known as Dragon Sickness and best categorized by physical, magical, and emotional 'rawness' leaving those affected more vulnerable to shifts in their magic, their emotions, or their health.
Unicorn blood causes a different kind of curse strongly tied to empathy and nature, known as Hunter's Remorse. It forces the afflicted to feel empathy, especially towards the suffering of the world and animals living on it. It's a defensive mechanism of the scarce unicorn population designed to cripple the drive of poachers, hunters, and predators.
Of the three we do feel Dragon's blood would be the closest, as many revered the three kingdom dragon brothers as deities due to their size and power. This would allow you to keep the symptoms (nightmares, blood sickness, empathy for the world and others through old magic) while also keeping the general story elements of being corrupted by a supposed diety
A fourth option for you would be to make her a follower of Anasta. A powerful temple priest or Anasta-worshipping witch could easily fool others into believing she was either an emissary or vessel of Anasta, the genderless butterfly diety of death, the afterlife, shadows, and resurrection. If that person were to be a vampir, their blood would be thoroughly cursed and should she be coaxed or tricked into drinking their blood they could pass on the side effects of their curse to her. A half-elf's body would not be prepared to handle the curse the way that a dhampir's is born to and the side effects of sharing the curse, voluntarily or by force, would leave her with similar symptoms to those you mention above. She would also have nightmarishly vivid and confusing dreams of the vampir's memories distorted through second-hand experience. She would not have the bloodlust or experience the benefits of drinking the blood of others, but she would have a very sensitive awareness of what is running through their veins and her own blood as it rejected the vampir's blood intermixing with it, would cause highs and lows of feeling stronger and more powerful followed by a withdrawal of feeling feeble. The blood would simultaneously be killing her and keeping her alive in a cycle as her body struggles to adjust to something it can't actually homogenize with.
